Whatever's in the Fridge Quesadilla

All you need for this recipe are flour tortillas, a refrigerator raid and a little creativity. Transform leftovers into something delicious by wrapping them up in a tortilla and melted cheese.  Serve with a bowl of your favorite soup and you'll have a perfect pairing.

Instructions

Layer half the tortilla with the cheese, chicken and green onions.  Fold the tortilla in half over the filling.
Heat the oil in a 10-inch skillet over medium-high heat.  Cook the filled tortilla for 2 minutes on each side or until golden brown and the cheese is melted.

Ingredients

1 flour tortilla (8-inch), warmed
0.333 cup shredded Cheddar cheese (or whatever shredded cheese you have on hand)
0.25 cup shredded cooked chicken (or try leftover turkey, steak or ham)
2 tablespoons green onion (or chopped mushrooms or peppers)
1 tablespoon vegetable oil
